Maison Dorée is a concept premium croissant and viennoiserie manufacturing brand headquartered in Lyon, France — chosen deliberately. Lyon sits at the gastronomic heart of Europe, with a food culture so deeply embedded in civic identity that the city is known globally as the capitale gastronomique du monde. It provides the provenance story, the ingredient access, and the cultural credibility that no other European city can match for a premium baked goods brand.

The product range centres on fourteen croissant varieties and twelve companion viennoiserie products — from the classic beurre and almond to matcha, dark chocolate, pistachio frangipane, and seasonal specials — manufactured in a 2,800sqm purpose-built production facility in Lyon’s 7th arrondissement, distributed to retail, hospitality, airline catering, and direct-to-consumer markets across France, the UK, Belgium, Switzerland, Germany, and the UAE, with a direct-to-consumer subscription and three flagship café-concept locations in Lyon, Paris, and London.

Before — The Problem

The founding team — two professional pastry chefs trained at Paul Bocuse and Ferrandi Paris — had spent two years perfecting lamination techniques, sourcing AOP Charentes-Poitou butter, and achieving IFS Food certification. Their croissants were, by any objective measure, extraordinary.

Their brand was a handwritten label on a brown bag. Their Instagram was a collection of blurry phone photos with inconsistent captions. Their website was a single page with a contact form and a PayPal button. Two Michelin-starred restaurants in Lyon had informally expressed interest in a supply relationship — and both had declined to formalise it because the supplier didn’t look like a professional food business.
