Founded by master chocolatier Elise Van den Berg, trained at the École Chocolat in Brussels and the Valrhona school in Tain-l’Hermitage, France.

The product range spans eighteen chocolate and confectionery varieties — from single-origin dark bars and hand-piped pralines to salted caramel bonbons, fruit pâtes de fruits, chocolate-covered dried fruits, seasonal truffles, and a patisserie confectionery line — manufactured in a 1,800sqm purpose-built production facility in Bruges, sold through three boutique retail locations in Bruges, Brussels, and London, a global e-commerce platform, a chocolate subscription service, and a wholesale channel serving premium hotels, restaurants, and corporate gifting clients across Europe, the USA, and the UAE.

The brief: build a chocolate brand sophisticated enough to sit on the counter of a five-star hotel and desirable enough to generate 50,000 Instagram followers organically — while communicating the craft, ingredient sourcing, and production transparency that premium chocolate buyers demand in 2026. Then build the digital infrastructure to convert that desirability into consistent revenue across retail, wholesale, e-commerce, and subscription channels simultaneously.

Before — The Problem

Elise had spent four years perfecting her recipes, sourcing single-origin cacao from Ecuador, Madagascar, and São Tomé, and developing the tempering techniques that give Noir & Bloom chocolates their distinctive snap, sheen, and melt. Her products had been informally tasted and praised by two Michelin-starred hotel groups and a major London department store buyer.

Every conversation ended the same way — extraordinary quality, but the brand isn’t there yet.

The packaging was generic kraft with a handwritten label. The photography was taken on a phone. The website was a Squarespace template with one product page and a PayPal button. There was no wholesale catalogue, no brand story, no production documentation, no food safety certification visible to trade buyers.

Typography: an elegant high-contrast modern serif for the brand name, a refined geometric sans-serif for product copy and digital.
